Pan-Seared Sirloin with Sweet Caramelized Onions

Pat the sirloin steaks dry with paper towels and season generously on both sides with salt and black pepper. Set aside.
Thinly slice the yellow onions.
Heat olive oil in a large, heavy-bottomed skillet or cast-iron pan over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-35 minutes, or until they are deeply golden brown and very tender. If they start to dry out, add a tablespoon of water to deglaze the pan.
Remove the caramelized onions from the skillet and set them aside.
Increase the heat to medium-high. Add the butter to the skillet. Once the butter is melted and sizzling, carefully place the seasoned steaks in the hot pan.
Sear the steaks for 3-4 minutes per side for medium-rare, or adjust cooking time to achieve your desired doneness.
Remove steaks from the pan and let them rest on a cutting board for 5-7 minutes before slicing.
Slice the steak against the grain and serve immediately, topped with the sweet caramelized onions.
