Garlic Ginger Shrimp and Broccoli Stir-fry

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, cornstarch, and water to create the stir-fry sauce. Set aside.
Heat olive oil in a large wok or skillet over medium-high heat.
Add shrimp to the hot wok and stir-fry for 1-2 minutes per side, until pink and opaque. Remove shrimp from the wok and set aside.
Add broccoli florets to the wok. Stir-fry for 3-5 minutes until tender-crisp, adding a splash of water if needed to help steam.
Add minced garlic and grated ginger to the wok with the broccoli. Stir-fry for 30 seconds until fragrant.
Return the cooked shrimp to the wok. Give the prepared sauce a quick stir and pour it over the shrimp and broccoli.
Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats all ingredients.
Remove from heat. Garnish with chopped green onions and red pepper flakes (if using). Serve immediately, perhaps over rice.
