  1. 1

Slice the pork tenderloin into thin strips. In a medium bowl, combine 30ml (2 tablespoons) of soy sauce, sesame oil, grated ginger, and minced garlic. Add the pork strips and toss to coat. Let marinate for at least 10 minutes while you prepare other ingredients.

  2. 2

Cook the egg noodles according to package directions. Drain well and set aside.

  3. 3

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork (reserving any excess marinade) and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove the pork from the skillet and set aside.

  4. 4

Add the julienned carrot to the skillet and stir-fry for 2 minutes. Then add the chopped bok choy and stir-fry for another 2-3 minutes until tender-crisp.

  5. 5

In a small bowl, whisk together the remaining 15ml (1 tablespoon) of soy sauce, chicken broth, and cornstarch until smooth.

  6. 6

Return the cooked pork to the skillet with the vegetables. Add the cooked noodles. Pour the sauce mixture over everything and toss to combine, cooking for 1-2 minutes until the sauce thickens and coats all ingredients.

  7. 7

Season with salt and black pepper to taste. Serve immediately.
