Pan-Seared Chicken with Balsamic Glazed Mushrooms

Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove chicken from the skillet and set aside.
In the same skillet, add sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until softened and browned.
Mince garlic and add it to the skillet with the mushrooms. Cook for 1 minute until fragrant.
Pour in balsamic vinegar and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce for 2-3 minutes until slightly thickened.
Stir in fresh thyme.
Return chicken to the skillet, spooning the mushroom glaze over the chicken.
Garnish with fresh parsley before serving.
