Creamy Garlic Chicken and Spinach

Pat chicken breasts dry and season generously with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside on a plate.
Reduce heat to medium. Add minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to burn it.
Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
Stir in grated Parmesan cheese until melted and the sauce thickens slightly.
Add fresh spinach to the skillet and cook, stirring occasionally, until it wilts completely, about 2-3 minutes.
Return the cooked chicken breasts to the skillet, spooning the creamy spinach sauce over them. Heat for another minute to warm through.
Serve immediately, perhaps with a side of pasta or rice if desired.
