Maple-Balsamic Glazed Bacon Brussels Sprouts

Ingredients
All Steps
- 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2
Trim the ends of the Brussels sprouts and cut them in half. In a large bowl, toss the halved Brussels sprouts with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.
- 3
Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 minutes, or until tender-crisp and slightly caramelized. Flip halfway through to ensure even cooking.
- 4
While the Brussels sprouts are roasting, cook the bacon. Place the bacon slices in a cold skillet over medium heat. Cook until crispy, about 5-7 minutes. Remove bacon to a paper towel-lined plate to drain, then crumble once cooled. Carefully pour off most of the bacon fat from the skillet, leaving about 1 teaspoon.
- 5
In the same skillet with the reserved bacon fat (or a clean small saucepan), combine the balsamic vinegar and maple syrup. Bring to a simmer over medium heat and cook for 2-3 minutes, stirring occasionally, until the glaze slightly thickens.
- 6
Once the Brussels sprouts are done, transfer them back to the large bowl. Add the crumbled bacon and pour the maple-balsamic glaze over the top. Toss gently to combine, ensuring all sprouts and bacon are coated.
- 7
Serve immediately as a delicious side dish.
