Chipotle Lime Ground Beef Street Tacos

Finely dice the onion and mince the garlic. Mince the chipotle pepper.
Heat olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Add the diced onion to the skillet with the beef and cook until softened, about 3-5 minutes. Stir in the minced garlic, minced chipotle pepper, adobo sauce, cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.
Squeeze in the juice of one lime. Add 1/4 cup of water or beef broth if the mixture seems too dry, then bring to a gentle simmer. Reduce heat to low, cover, and let the beef mixture cook for 5-7 minutes to allow the flavors to meld.
While the beef simmers, prepare your toppings: dice the avocado and roughly chop the fresh cilantro.
Warm the corn tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or by heating them in a dry skillet over medium heat for about 20-30 seconds per side until pliable.
To assemble the tacos, spoon the chipotle lime beef mixture into the warm tortillas. Top with diced avocado, fresh cilantro, and a dollop of sour cream or Greek yogurt.
