Heat olive oil in a large skillet or pan over medium-high heat. Add chicken and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the pan and set aside.

Add minced garlic to the same skillet and cook for 1 minute until fragrant. Add cherry tomatoes and cook for 3-5 minutes until they start to soften and burst.

Pour in chicken broth, lemon juice, and dried oregano. Bring to a simmer.

Add uncooked penne pasta to the skillet, stirring to ensure it's submerged. Cover and cook for 10-12 minutes, or according to package directions, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed.

Return cooked chicken to the skillet. Stir in fresh parsley and grated Parmesan cheese.
