Mediterranean Turkey & Spinach Skillet

Heat olive oil in a large skillet over medium heat.

Add chopped onion and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.

Add ground turkey to the skillet and break it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.

Stir in the diced tomatoes (undrained), dried oregano, salt, and black pepper. Bring to a simmer.

Add the fresh spinach, a handful at a time, allowing it to wilt before adding more. Stir until all spinach is incorporated and wilted.
