Savory Garlic Soy Beef & Broccoli Stir-fry

Slice the beef sirloin thinly against the grain. In a small bowl, toss the beef with 1 tablespoon of soy sauce and 0.5 teaspoon of cornstarch. Set aside to marinate for 10 minutes.
Cut the broccoli head into bite-sized florets. Steam or blanch the broccoli for 3-4 minutes until crisp-tender. Drain and set aside.
Mince the garlic and grate the fresh ginger. In a separate small bowl, whisk together the remaining 3 tablespoons of soy sauce, 1 teaspoon of cornstarch, 0.25 cup of water, sesame oil, and brown sugar until smooth. This is your stir-fry sauce.
Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering. Add the marinated beef and stir-fry for 2-3 minutes until browned and cooked through. Remove the beef from the wok and set aside.
Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.
Add the blanched broccoli to the wok and stir-fry for 1-2 minutes. Return the cooked beef to the wok.
Pour the prepared stir-fry sauce over the beef and broccoli. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats all ingredients.
Serve immediately, optionally over rice or noodles.
