Classic Beef and Onion Skillet

Slice the beef sirloin against the grain into thin strips, about 1/4 inch thick.
Peel and slice the yellow onions into thin half-moons.
Heat olive oil in a large skillet or frying pan over medium-high heat.
Add the beef strips to the hot skillet, season with salt and pepper. Cook, stirring occasionally, until browned on all sides, about 3-5 minutes. Remove the beef from the skillet and set aside.
Add the sliced onions to the same skillet. Reduce heat to medium and cook, stirring frequently, until the onions are softened and caramelized to a golden brown, about 8-10 minutes.
Return the cooked beef to the skillet with the caramelized onions. Stir well to combine and heat through for an additional 1-2 minutes.
