Preheat oven to 375°F (190°C).

    Preheat oven to 375°F (190°C).

    Halve the bell peppers lengthwise and remove seeds and membranes. Place cut-side up in a baking dish.

    Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.

    Add minced garlic and cook for another minute until fragrant.

    Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.

    Stir in the fresh spinach, cooking until wilted, about 2-3 minutes.
