Cut the chicken breast into 1-inch bite-sized pieces and season generously with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
Add the broccoli florets to the same skillet. Add 1/4 cup (60ml) of water, cover, and steam for 3-4 minutes until the broccoli is tender-crisp. Drain any remaining water.
Add the minced garlic to the skillet with the broccoli and cook for 1 minute until fragrant.
In a small bowl, whisk together the chicken broth, heavy cream, and cornstarch until smooth. Pour this mixture into the skillet with the broccoli. Bring to a gentle simmer, stirring constantly, until the sauce thickens slightly, about 2-3 minutes.
Return the cooked chicken to the skillet. Stir in the shredded sharp cheddar cheese until it is completely melted and the sauce is smooth and creamy.
