Roasted Turkey Breast with Cranberry Sage Glaze

Preheat oven to 3750F (1900C). Pat the turkey breast dry with paper towels. Season generously with salt and pepper.

In a small saucepan, combine cranberries, brown sugar, orange zest (from the whole orange), orange juice (from half the orange), half of the chopped fresh sage, and chicken broth. Bring to a simmer over medium heat, stirring occasionally, until cranberries burst and the sauce slightly thickens (about 5-7 minutes).

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the turkey breast on all sides until lightly browned, about 2-3 minutes per side.

Remove skillet from heat. Pour the cranberry glaze over the turkey breast. Sprinkle the remaining fresh sage leaves over the turkey and glaze.

Transfer the skillet to the preheated oven and roast for 25-35 minutes, or until an internal temperature of 1650F (740C) is reached. Baste occasionally with the pan juices.
