Mediterranean Chicken with Burst Tomatoes and Basil

Pat chicken breasts dry with paper towels and season generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from the skillet and set aside on a plate, tented with foil.

Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant. Be careful not to burn it.

Add cherry tomatoes to the skillet. Cook, stirring occasionally and pressing down on some of the tomatoes with the back of your spoon to help them burst, for 5-7 minutes or until most tomatoes have softened and burst, creating a sauce.

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes to slightly reduce the sauce.

Stir in the fresh basil leaves until just wilted. Taste the sauce and adjust seasoning if needed.

Return the cooked chicken breasts to the skillet, spooning the tomato and basil sauce over them. Serve immediately with your favorite side, such as pasta or rice.
