Ingredients
All Steps
- 1
Rinse 1 cup of quinoa thoroughly under cold water. Cook quinoa according to package directions (typically 1 cup quinoa to 2 cups water, simmer for 15 minutes, then let stand covered for 5 minutes). Fluff with a fork and set aside to cool.
- 2
While quinoa cooks, drain and rinse the 15 oz can of black beans. Thaw 1.5 cups of frozen corn (you can do this by running under warm water or microwaving briefly).
- 3
Finely dice 1/4 cup of red onion and chop 1/4 cup of fresh cilantro.
- 4
In a small bowl, whisk together the juice of one lime, 2 tablespoons of olive oil, 1 teaspoon of cumin, 0.5 teaspoon of chili powder, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to create the dressing.
- 5
In a large mixing bowl, combine the cooled quinoa, rinsed black beans, thawed corn, diced red onion, and chopped cilantro.
- 6
Pour the dressing over the quinoa mixture. Toss gently to ensure all ingredients are well coated.
- 7
Serve immediately or chill for at least 30 minutes to allow the flavors to meld. This dish can be enjoyed warm or cold.
