    Dice the baby potatoes into 1-inch pieces. Thinly slice the red onion. In a large bowl, combine the diced potatoes, sliced red onion, 1 tbsp olive oil, 0.25 tsp salt, and 0.125 tsp black pepper. Toss to coat evenly.

    Spread the seasoned potatoes and onion in a single layer on a large baking sheet. Roast for 15 minutes.
