    In a large bowl, combine the quartered potatoes with 1 tablespoon of olive oil, half of the minced garlic, 0.25 teaspoon of salt, and 0.125 teaspoon of black pepper. Toss to coat evenly.

    Spread the seasoned potatoes in a single layer on one side of the prepared baking sheet. Roast for 15 minutes.

    While potatoes are roasting, in the same bowl (no need to wash), combine the sliced sausage with the remaining 1 tablespoon of olive oil, the rest of the minced garlic, dried rosemary, dried thyme, 0.25 teaspoon of salt, 0.125 teaspoon of black pepper, and optional red pepper flakes. Toss well.

    After the potatoes have roasted for 15 minutes, add the seasoned sausage to the other side of the baking sheet, ensuring everything is in a single layer. Continue roasting for another 15 minutes.

    Remove the baking sheet from the oven. Add the chopped kale to the baking sheet, drizzling it with a tiny bit more olive oil (if needed, just a splash) and a squeeze of fresh lemon juice. Toss the kale with the hot ingredients on the pan, allowing it to wilt and crisp slightly.
