Pat the shrimp dry with paper towels. In a small bowl, whisk together soy sauce, honey, rice vinegar, toasted sesame oil, and red pepper flakes (if using). In a separate tiny bowl, dissolve cornstarch in cold water to make a slurry; set aside.

Pat the shrimp dry with paper towels. In a small bowl, whisk together soy sauce, honey, rice vinegar, toasted sesame oil, and red pepper flakes (if using). In a separate tiny bowl, dissolve cornstarch in cold water to make a slurry; set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes until tender-crisp. Remove broccoli from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.

Add the shrimp to the wok and stir-fry for 2-3 minutes until pink and cooked through. Be careful not to overcook.

Return the cooked broccoli to the wok with the shrimp. Give the prepared sauce a quick stir, then pour it over the shrimp and broccoli.

Quickly stir in the cornstarch slurry. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the shrimp and broccoli. Remove from heat.

Garnish with sliced green onions and serve immediately, ideally over steamed rice.
