Skillet Caprese Chicken

Pat chicken breasts dry and season generously with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.

Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Add cherry tomatoes to the skillet.

Cook tomatoes for 5-7 minutes, stirring occasionally, until they begin to soften and burst. Gently mash some of the tomatoes with the back of a spoon to create a sauce.

Return chicken to the skillet, nestling it into the tomato mixture. Stir in the fresh basil.
