Slice the bell peppers and onion into thin strips. Mince the garlic.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef in a single layer, searing for 2-3 minutes per side until browned. Do this in batches if necessary to avoid overcrowding the pan. Remove beef from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the same skillet. Reduce heat to medium, then add the sliced onions and bell peppers. Sauté for 5-7 minutes until softened.

Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
