Honey Garlic Chicken and Cauliflower Stir-fry

Cut chicken breast into 1-inch bite-sized pieces. Break cauliflower into small florets. Mince garlic and grate fresh ginger. Slice green onions for garnish.
In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. In a separate tiny bowl, mix cornstarch with water to create a slurry. Add the cornstarch slurry to the sauce mixture and whisk until well combined.
Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Add cauliflower florets to the same skillet. Cook for 5-7 minutes, stirring occasionally, until tender-crisp. If needed, add a splash of water and cover for a few minutes to steam.
Add minced garlic and grated ginger to the skillet with the cauliflower. Stir-fry for 1 minute until fragrant.
Return the cooked chicken to the skillet with the cauliflower. Pour the prepared honey garlic sauce over the chicken and cauliflower. Cook, stirring constantly, for 1-2 minutes, until the sauce thickens and coats all the ingredients.
Remove from heat. Garnish with sliced green onions and sesame seeds before serving.
