Creamy Skillet Chicken with Spinach

Pat chicken breasts dry and season generously with salt and pepper on both sides. Thinly slice the yellow onion and mince the garlic.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
Reduce heat to medium. Add sliced onion to the skillet and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Stir in grated Parmesan cheese until melted and the sauce slightly thickens.
Add fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.
Return the cooked chicken breasts to the skillet, spooning the creamy spinach sauce over them. Serve immediately.
