Broccoli and Egg Stir-fry

Cut the broccoli into small florets. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.

Once the oil is hot, add the minced garlic and stir-fry for 30 seconds until fragrant.

Add the broccoli florets to the skillet and stir-fry for 3-5 minutes until tender-crisp.

While the broccoli is cooking, whisk the eggs with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper in a bowl.

Push the broccoli to one side of the skillet. Pour the whisked eggs into the empty side and scramble until just set, breaking them into smaller pieces.

In a small bowl, combine the soy sauce, sesame oil, and water. Pour this sauce over the broccoli and eggs in the skillet.

Toss everything together to coat evenly and continue to stir-fry for another 1-2 minutes until the sauce has slightly reduced and everything is heated through.
