Quick Shrimp and Broccoli Stir-fry

In a small bowl, whisk together soy sauce, sesame oil, grated ginger, minced garlic, cornstarch, and 2 tablespoons of water. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add broccoli florets to the hot skillet and stir-fry for 3-5 minutes until tender-crisp. Remove broccoli from the skillet and set aside.
Add shrimp to the skillet and cook for 2-3 minutes, flipping once, until pink and opaque. Do not overcook.
Return the cooked broccoli to the skillet with the shrimp.
Give the sauce mixture another quick whisk and pour it over the shrimp and broccoli. Stir constantly for 1-2 minutes until the sauce thickens and coats all ingredients.
Serve immediately over cooked rice.
