Pat chicken breasts dry with paper towels and season evenly with half of the salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken breasts and sear for 4-5 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
Add butter to the same skillet. Once melted, add sliced cremini mushrooms and cook for 5-7 minutes, stirring occasionally, until they are softened and browned.
Add minced garlic to the skillet and cook for an additional 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring well and scraping up any browned bits from the bottom of the skillet. Bring the sauce to a gentle simmer.
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Stir in the fresh chopped parsley and the remaining salt and pepper.
Continue to simmer for 5-7 minutes, or until the sauce has thickened slightly and the chicken is heated through.
