Finely chop 1 clove of garlic and grate the half onion. Roughly chop the fresh mint leaves (reserve some for garnish).

In a large bowl, combine the ground lamb, grated onion, 1 chopped garlic clove, breadcrumbs, ground cumin, ground coriander, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well with your hands until everything is thoroughly combined.

Divide the lamb mixture into 4-6 equal portions. Form each portion into an elongated oval shape, pressing firmly. If using wooden skewers, thread the lamb onto the skewers (optional).

Heat olive oil in a large skillet or grill pan over medium-high heat. Carefully place the lamb kofta in the pan. Cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 160°F/71°C).

While the kofta cooks, prepare the mint yogurt sauce. In a small bowl, combine the Greek yogurt, the remaining 1 chopped garlic clove (or minced), 2 tablespoons of the chopped fresh mint, lemon juice, 1/4 teaspoon salt, and a pinch of black pepper. Stir until well combined.
