Creamy Garlic Chicken and Mushrooms

Pat chicken breasts dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add chopped onion and sauté for 2-3 minutes until softened. Add sliced mushrooms and minced garlic, cooking for another 5-7 minutes until mushrooms are tender and browned.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2 minutes.
Stir in heavy cream and bring the sauce to a gentle simmer. Cook for 3-5 minutes, or until the sauce slightly thickens.
Return the cooked chicken to the skillet, coating it in the creamy sauce. Garnish with fresh chopped parsley before serving.
Serve hot, optionally over rice or pasta, or with a side of steamed vegetables.
