Mediterranean Ground Beef and Rice Skillet

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for 1 minute until fragrant.
Stir in the uncooked rice, diced tomatoes (undrained), and beef broth. Bring the mixture to a boil.
Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Garnish with fresh chopped parsley and serve with a lemon wedge for a squeeze of fresh juice, if desired.
