Savory Beef & Broccoli Noodle Stir-fry

Thinly slice the beef against the grain into bite-sized pieces. In a small bowl, combine 1 tbsp soy sauce and 1 tsp cornstarch with the beef. Mix well and set aside.
Prepare the vegetables: julienne the carrot, slice the bell pepper, mince the garlic, and grate the ginger.
In a separate small bowl, whisk together the remaining soy sauce, oyster sauce, brown sugar, 1 tsp cornstarch, and water/beef broth to create the stir-fry sauce.
Cook the egg noodles according to package directions. Drain and rinse with cold water to prevent sticking, then toss with 1 tsp sesame oil. Set aside.
Heat 1 tbsp vegetable oil in a large wok or skillet over high heat until shimmering. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned and cooked through. Remove beef from the pan and set aside.
Add the remaining 1 tbsp vegetable oil to the wok. Add garlic, ginger, carrots, and bell pepper. Stir-fry for 2-3 minutes until slightly tender-crisp. Add the broccoli florets and stir-fry for another 2-3 minutes.
Return the cooked beef to the wok with the vegetables. Add the cooked noodles and pour the stir-fry sauce over everything. Toss continuously for 1-2 minutes until the sauce has thickened and coated all ingredients evenly.
Garnish with chopped green onions and sesame seeds before serving hot.
