Savory Beef and Mushroom Stir-fry

Cook the white rice according to package instructions. Set aside.
Slice the beef against the grain into thin strips. In a medium bowl, combine 2 tablespoons of soy sauce, cornstarch, water, and sesame oil. Add the beef strips and toss to coat. Let marinate for at least 10 minutes.
Slice the cremini mushrooms. Mince the garlic and grate the fresh ginger. Slice the green onions, separating the white and green parts.
Heat vegetable oil in a large wok or skillet over high heat until shimmering.
Add the marinated beef to the hot wok in a single layer (you may need to do this in batches to avoid overcrowding). Stir-fry for 2-3 minutes until browned on all sides. Remove the beef from the wok and set aside.
Add the sliced mushrooms to the wok and stir-fry for 3-5 minutes until softened and lightly browned. Push the mushrooms to one side.
Add the minced garlic and grated ginger to the clear side of the wok and stir-fry for 30 seconds until fragrant.
Return the beef to the wok along with the remaining 1 tablespoon of soy sauce. Add the white parts of the green onions.
Stir-fry for another 1-2 minutes, ensuring everything is well combined and heated through.
Remove from heat, garnish with the green parts of the green onions, and serve immediately with the cooked white rice.
