Savory Beef and Rice Skillet

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Add chopped onion, minced garlic, and diced green bell pepper to the skillet with the beef. Sauté for 5-7 minutes until vegetables are tender.
Stir in the uncooked long-grain white rice, tomato paste, soy sauce, salt, and black pepper. Cook for 1 minute, stirring constantly, to lightly toast the rice.
Pour in the beef broth. Bring the mixture to a simmer, then reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork.
Sprinkle the shredded cheddar cheese over the top of the beef and rice. Cover again for a few minutes until the cheese is melted and bubbly.
Serve hot directly from the skillet.
