Pat the salmon fillets dry with paper towels. Season both sides generously with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Once hot, place the salmon fillets skin-side down (if applicable) and cook for 4-6 minutes, or until the skin is crispy and golden.
Flip the salmon and cook for another 3-5 minutes, depending on thickness, until it reaches your desired doneness. Remove from skillet and set aside.
While the salmon cooks, prepare the avocado sauce: In a small food processor or blender, combine the flesh of the two ripe avocados, the juice of the whole lime, 1/4 cup fresh cilantro, the peeled garlic clove, 1 tablespoon of olive oil, 2 tablespoons of mayonnaise, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
