Speedy Hoisin Beef and Pepper Stir-fry

Slice the beef sirloin thinly against the grain into bite-sized strips. Set aside.
Slice bell peppers and yellow onion into thin strips. Mince the garlic and grate the fresh ginger.
In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and cornstarch. This is your stir-fry sauce.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.
Add the beef strips to the hot skillet and stir-fry for 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced onion and bell peppers and stir-fry for 3-5 minutes until they are crisp-tender.
Add the minced garlic and grated ginger to the skillet and stir-fry for another minute until fragrant.
Return the cooked beef to the skillet with the vegetables. Give the prepared stir-fry sauce a quick whisk (as cornstarch can settle) and pour it over the beef and vegetables.
Stir continuously for 1-2 minutes until the sauce thickens and evenly coats all the ingredients. Serve immediately, ideally with steamed rice.
