Quick Beef Noodle Stir-fry

Slice beef against the grain into thin strips. In a bowl, toss beef with half of the soy sauce, half of the sesame oil, and a pinch of salt and pepper. Let marinate for 10 minutes.
Cook noodles according to package directions. Drain and set aside.
In a small bowl, whisk together remaining soy sauce, remaining sesame oil, beef broth, and cornstarch. Set aside.
Heat vegetable oil in a large skillet or wok over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove beef from skillet and set aside.
Add ginger and garlic to the skillet and stir-fry for 30 seconds until fragrant.
Add broccoli and carrots to the skillet and stir-fry for 3-4 minutes until tender-crisp.
Return cooked beef to the skillet. Add cooked noodles and the prepared sauce. Toss everything together until the sauce thickens and coats the noodles and vegetables.
Stir in chopped green onions. Serve immediately.
