Make the Chipotle Crema: In a small bowl, whisk together the sour cream, mayonnaise, chipotle in adobo sauce, and the juice from the remaining half lime. Add honey if desired for a touch of sweetness. Mix until smooth and well combined. Taste and adjust seasoning.
Cook the Shrimp: Pat the shrimp dry. In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper until evenly coated. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 1-2 minutes per side, or until pink and opaque.
