In a bowl, combine 2 tablespoons of olive oil, 1 minced garlic clove, 1 tablespoon of lemon juice, half of the salt, and half of the pepper. Add the cubed lamb and toss to coat. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

In a small food processor or blender, combine the fresh mint leaves, Greek yogurt, remaining minced garlic clove, remaining lemon juice, remaining salt, and remaining pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

    Preheat your grill to medium-high heat. Thread the marinated lamb cubes onto skewers, alternating with red onion wedges if desired.

    Lightly brush the grill grates with the remaining olive oil to prevent sticking.

    Grill the lamb skewers for 3-4 minutes per side for medium-rare, or until desired doneness is reached. The internal temperature should be 145°F (63°C) for medium-rare.
