Classic Chicken and Broccoli Stir-Fry

Slice chicken breast into bite-sized pieces. In a bowl, toss chicken with 5g of cornstarch and 15ml of soy sauce. Set aside.

In a small bowl, whisk together remaining soy sauce, chicken broth, sesame oil, brown sugar, remaining 10g of cornstarch, grated ginger, and minced garlic. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.

Add broccoli florets to the same pan. If needed, add a tablespoon of water, cover, and steam for 2-3 minutes until bright green and slightly tender-crisp. Alternatively, stir-fry until desired tenderness.

Return cooked chicken to the pan with the broccoli. Give the prepared sauce a quick stir and pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats all ingredients, about 1-2 minutes.
