Savory Beef and Broccoli Stir-Fry with Black Bean Sauce

Thinly slice the flank steak against the grain into 1/4-inch thick strips. In a small bowl, combine the beef with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Let marinate for at least 15 minutes while you prepare other ingredients.

Finely mince the garlic and ginger. Cut the red bell pepper into thin strips and the yellow onion into thin slices. Chop the broccoli into bite-sized florets.

For the black bean sauce, lightly mash the fermented black beans (if whole) and combine them in a small bowl with the remaining 2 tablespoons of soy sauce, rice vinegar, sugar, the remaining 1 tablespoon of cornstarch, and water or beef broth. Stir until the cornstarch is fully dissolved.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned and mostly cooked through. Remove the beef from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Add the broccoli florets, red bell pepper, and yellow onion. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Return the cooked beef to the wok with the vegetables. Give the black bean sauce a quick stir and pour it over the beef and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything evenly.
