Pulled Pork BBQ Stuffed Bell Peppers

Halve the bell peppers lengthwise and carefully remove the seeds and membranes. Lightly brush the cut sides with olive oil and sprinkle with a pinch of salt and black pepper.

In a medium bowl, combine the ready-to-eat pulled pork BBQ and the drained canned corn.

Place the bell pepper halves cut-side up in a baking dish. Divide the pulled pork and corn mixture evenly among the pepper halves, filling each one generously.

Sprinkle the shredded cheddar cheese over the top of the filling in each pepper.

Add approximately 1/4 inch of water to the bottom of the baking dish to create steam, which helps tenderize the peppers.
