  1. 1

Preheat your oven to 375°F (190°C).

  2. 2

Halve the bell peppers lengthwise and carefully remove the seeds and membranes. Lightly brush the cut sides with olive oil and sprinkle with a pinch of salt and black pepper.

  3. 3

In a medium bowl, combine the ready-to-eat pulled pork BBQ and the drained canned corn.

  4. 4

Place the bell pepper halves cut-side up in a baking dish. Divide the pulled pork and corn mixture evenly among the pepper halves, filling each one generously.

  5. 5

Sprinkle the shredded cheddar cheese over the top of the filling in each pepper.

  6. 6

Add approximately 1/4 inch of water to the bottom of the baking dish to create steam, which helps tenderize the peppers.

  7. 7

Bake for 25-30 minutes, or until the bell peppers are tender and the cheese is melted, bubbly, and lightly golden.

  8. 8

Garnish with freshly chopped green onions, if desired, and serve hot.
