Pat pork chops dry with paper towels and season generously with salt and black pepper on both sides.

    Pat pork chops dry with paper towels and season generously with salt and black pepper on both sides.

    Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear pork chops for 4-5 minutes per side, until deeply golden brown and cooked through (internal temperature reaches 145°F/63°C). Remove chops from the skillet and set aside on a plate, tented with foil.

    Reduce heat to medium. Add butter to the skillet. Once melted, add diced apple and chopped onion. Sauté for 5-7 minutes, stirring occasionally, until apples are slightly tender and onions are translucent. Add minced garlic and fresh thyme, cooking for another minute until fragrant.
