Slice chicken breast into thin strips. In a bowl, toss chicken with 15ml soy sauce and 5g cornstarch. Set aside.

    Grate ginger and mince garlic. Cut broccoli into florets and thinly slice the carrot.

    In a small bowl, whisk together remaining soy sauce, grated ginger, minced garlic, sesame oil, rice vinegar, brown sugar, and water to create the stir-fry sauce.

    Heat vegetable oil in a large wok or skillet over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken from the pan and set aside.
