Zesty Cilantro Lime Rice and Beans

Rinse the white rice under cold water until the water runs clear. This helps prevent stickiness.

In a medium saucepan, heat the olive oil over medium heat. Add the rinsed rice and toast for 1-2 minutes, stirring constantly, until slightly fragrant.

Pour in the vegetable broth and add the salt. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until all the liquid is absorbed and the rice is tender.

While the rice is cooking, drain and rinse the black beans thoroughly. Finely chop the fresh cilantro and cut the lime in half.

Once the rice is cooked, remove it from the heat and let it stand, covered, for 5 minutes. This allows the rice to finish steaming and become fluffier.

Fluff the rice with a fork. Stir in the drained black beans, chopped cilantro, and the juice from half of the lime. Taste and add more lime juice or black pepper if desired.
