Creamy Mushroom Chicken

Season chicken breasts generously with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 3-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add chopped yellow onion and cook until softened, about 2-3 minutes. Add minced garlic and sliced mushrooms, cook until mushrooms are tender and have released their liquid, about 5-7 minutes.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
Stir in heavy cream and bring the sauce to a gentle simmer. Season with more salt and pepper to taste.
Return chicken breasts to the skillet, coating them in the creamy mushroom sauce. Heat through for 1-2 minutes.
Garnish with fresh parsley before serving.
