Pan-Seared Sirloin with Garlic Herb Mushrooms

Pat the sirloin steaks dry with paper towels and season generously with salt and black pepper on all sides.

Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.

Carefully place the seasoned steaks in the hot skillet. Sear for 3-5 minutes per side for medium-rare, or adjust to your desired doneness. For medium-rare, the internal temperature should be 130-135°F (54-57°C).

While the steaks are searing, slice the cremini mushrooms. Mince the garlic cloves, and chop the fresh thyme and rosemary.

Once steaks reach desired doneness, remove them from the skillet and let rest on a cutting board, tented loosely with foil, for at least 5-7 minutes. Resting allows the juices to redistribute, ensuring a tender steak.

Reduce heat to medium. Add butter to the same skillet. Once melted, add sliced mushrooms, minced garlic, fresh thyme, and fresh rosemary.

Sauté the mushrooms, stirring occasionally, until they are tender and browned, about 5-7 minutes. Season with a pinch of salt and pepper.
