Spicy Garlic Chicken Noodles Stir-fry

Cut chicken breast into bite-sized pieces. In a small bowl, whisk together 3 tbsp soy sauce, sesame oil, minced garlic, grated ginger, and red pepper flakes to make the sauce. Set aside.
Cook egg noodles according to package directions. Drain and rinse with cold water to prevent sticking, then set aside.
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.
Add the remaining 1 tbsp vegetable oil to the skillet. Add broccoli florets and julienned carrot. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
Return cooked chicken to the skillet with the vegetables. Add the cooked noodles and pour the prepared sauce over everything. Toss well to combine and heat through for 2-3 minutes, ensuring the noodles are evenly coated.
Stir in half of the sliced green onions just before serving. Garnish with the remaining green onions.
