Cilantro Lime Black Beans and Rice

Rinse the rice thoroughly under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.

While the rice cooks, drain and rinse the canned black beans well under cold water. Set aside.

Finely chop the fresh cilantro. Zest and then juice the lime. Mince the garlic clove.

In a small bowl, whisk together the lime juice, olive oil, minced garlic, salt, and black pepper to create the dressing.

Once the rice has rested, fluff it with a fork. Gently fold in the rinsed black beans, chopped cilantro, and the prepared lime-garlic dressing until all ingredients are well combined.
