In a medium bowl, combine the shredded cooked chicken with diced bell pepper, diced onion, cumin powder, chili powder, salt, and black pepper. Mix well to ensure the chicken is evenly seasoned.
- 2
Heat half of the olive oil in a large non-stick skillet over medium heat.
- 3
Place one flour tortilla in the skillet. Sprinkle half of one side of the tortilla with about a quarter of the shredded cheese, then spread half of the chicken mixture over the cheese.
- 4
Sprinkle another quarter of the cheese over the chicken mixture. Fold the other half of the tortilla over to create a half-moon shape.
- 5
Cook for 3-4 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly. Remove from skillet and set aside.
- 6
Repeat the process with the remaining olive oil, tortilla, chicken mixture, and cheese to make the second quesadilla.
- 7
Once both quesadillas are cooked, slice each into 2-3 pieces and serve immediately with your favorite toppings like salsa, sour cream, or guacamole (optional).
