Finely chop the celery and onion. In a small pan, melt the butter over medium heat and sauté the chopped celery and onion until softened, about 5 minutes.

Prepare the stuffing mix according to package directions, substituting chicken broth for water and stirring in the sautéed celery and onion. Stir in the fresh parsley.

Pat the turkey roast dry with paper towels. Season generously with salt and black pepper on all sides.
