For the Dough: In a large bowl, combine whole wheat flour and 1/4 teaspoon of salt. Add 1 tablespoon of oil and gradually add water, kneading to form a soft, pliable dough. Cover and let it rest for 15-20 minutes.

For the Stuffing: Boil the potatoes until tender. Peel and mash them thoroughly in a bowl. Finely chop the onion, green chili, fresh ginger, and fresh coriander leaves.

Add the chopped ingredients to the mashed potatoes. Stir in the remaining 1/4 teaspoon of salt, cumin powder, coriander powder, turmeric powder, and garam masala. Mix well to combine all ingredients evenly.

Divide the dough into 4 equal portions and the potato filling into 4 equal portions.

Take one dough ball and flatten it slightly with your palm. Roll it out into a small circle (about 3-4 inches in diameter). Place one portion of the potato filling in the center.

Gather the edges of the dough around the filling and seal it tightly, forming a ball. Lightly dust with flour and gently roll it out into a flatbread of about 6-7 inches in diameter, being careful not to let the filling break through.

Heat a tawa (griddle) or a non-stick pan over medium heat. Place the rolled paratha on the hot tawa.

Cook for about 1 minute until small bubbles appear. Flip the paratha and apply 1/2 teaspoon of oil or ghee on the cooked side. Cook for another minute.

Flip again and apply 1/2 teaspoon of oil or ghee on the other side. Press gently with a spatula and cook until both sides are golden brown with some crispy spots.

Repeat the process with the remaining dough and filling. Serve hot with yogurt, butter, or pickle.
